Rýchle fakty: Každá baskická jadráreň, čiže sagardotegi, sa riadi prísnym tradičným kalendárom: jablčný mušt sa podáva len od polovice januára do apríla. Obrad txotx, pri ktorom sa mušt leje priamo z obrovských drevených sudov otvorením kohútika, je stáročný rituál, ktorý mení každé jedlo na živú spoločenskú udalosť.
Zaujímavosti: Tu je tá zvláštna časť: mušt sa vám nenaleje do pohára pri stole. Sami pristúpite k obrovskému sudu, otvoríte kohútik a chytíte tenký perlivý prúd v správnom uhle, inak budete celí mokrí.
