Faits rapides: Dolphins here are something of a maritime marvel: roughly 30 bottlenose dolphins live permanently in the estuary, one of the few fully resident estuarine populations in Europe. Each winter the lagoon hosts more than 30,000 migrating birds, with flamingos and spoonbills turning the mudbanks into a living canvas of pink and white.

Points forts: At sunset the salt evaporation pans glow a soft rose pink, tinted by millions of tiny brine shrimp that also draw flamingos into the shallows. Drifting past the Carrasqueira stilt pier, where fishermen moor their boats amid flooded rice paddies, feels like stumbling onto a coast that time forgot.
