These crisp, flaky lard cookies are so beloved in Latacunga that the city throws an entire annual festival in their honor. Master bakers still bake them the traditional way in wood-fired adobe ovens.

Unlike Mexican quesadillas, the Latacunga version is a sweet, golden pastry filled with fresh cheese. They are delicately scented with anise, a fragrant gift of the Spanish colonial era.
Figs are slowly cooked in thick panela syrup and served with slabs of fresh white cheese. It is a cherished Lenten and Easter treat across the Ecuadorian highlands.

This is Latacunga's signature plate, and its Quechua name literally means fat pig. It piles crispy fried pork with hominy, toasted corn, ripe plantain, and potato patties onto one hearty platter.

These are golden pan-fried potato patties stuffed with melted cheese. They are usually crowned with a peanut sauce and pickled onion salsa and served alongside chorizo.
Roast guinea pig is a pre-Hispanic delicacy still served whole at Latacunga's fiestas. It is seasoned with garlic and cumin, roasted on a spit, and enjoyed with potatoes and spicy aji sauce.

This ancient Andean drink is made from fermented sprouted corn and often has a creamy, slightly sour taste. In the Latacunga valley it has been brewed for centuries, even before the Incas arrived.

This steaming hot drink blends naranjilla fruit, cinnamon, panela, and a splash of aguardiente. It is the perfect warm-up for chilly nights at Latacunga's colorful markets.
A sweet festive drink made by infusing sugarcane alcohol with orchard fruits like peach or blackberry. Families in Latacunga prepare big batches of it for Christmas and New Year celebrations.

Really liked the low key pace here after Quito. Only gripe, it got freezing after sunset and my hostel had no heater. Bring layers.
Go to Cotopaxi on a weekday morning. I went Sunday and the buses were packed with day trippers. Also bring USD, the ATMs here charge a lot.
Skip the tourist lunch spots near Parque Vicente Leon. Walk 3 blocks south on Calle Quijada, locals eat there for half the price and double the portion.
Ehh, it's fine for a night if you're headed to Cotopaxi. Town itself is pretty sleepy, a lot of shops shut by 8pm. Glad I didn't book 3 nights.
Cotopaxi looming over town every morning, never got old. Streets felt safe even at night, food was hearty and cheap. Wish I'd had one more day.
