Plan language:

Pestil is a sun dried fruit puree sheet made from locally grown apricots or grapes, a traditional preservation method used for centuries in Cappadocia's cave homes. It offers a chewy, naturally sweet taste of the region's abundant fruit harvests.

Göreme's manti are tiny handmade dumplings filled with spiced ground lamb, served with garlic yogurt and melted butter with paprika. Local lore says a good bride should make manti so small that 40 fit on a single spoon.

This slow baked clay pot casserole features tender lamb or beef with local vegetables, tomatoes, and peppers. The porous clay pots used in Göreme are traditionally crafted from the region's own volcanic soil.

Served in distinctive tulip shaped glasses, Turkish tea is the lifeblood of Göreme's social culture and is offered free at nearly every shop and hotel. It is brewed using a double stacked kettle system called a çaydanlık.

This thick, unfiltered coffee is brewed in a copper pot called a cezve and is traditionally served with a glass of water and a piece of Turkish delight. Fortune telling by reading the coffee grounds left in the cup is a beloved tradition in Göreme's cafes.

This savory yogurt drink blended with water and salt is the perfect refreshing companion to Göreme's heavy meat kebabs and pastries. It is said that the best ayran should be frothy enough that you must drink it before the foam settles.

If you're fit, rent a scooter instead of doing tours. Costs like 20 euros for the day and you can hit Rose Valley, Love Valley, and Uchisar on your own schedule.
Skip the overpriced tourist restaurants on the main square. Walk toward Avanos road, there's a tiny place called Dibek that does amazing home cooking for half the price.
Three days is perfect. Two for the valleys and one for the balloons and museum. Any longer and you'll run out of things to do.
Woke up at 4am for the balloon ride and zero regrets. Floating over those fairy chimneys at sunrise is pure magic. Cold as hell though bring layers.
Cappadocia in November is quiet and cheap but some places were closed. Weather was okay but the balloons don't fly if it's windy so we waited 2 days.
