Faits rapides: La production de sauce de poisson sur Phu Quoc remonte à plus de 200 ans, et cette usine utilise encore des tonneaux en bois traditionnels d'une capacité allant jusqu'à 10 tonnes chacun. L'île produit environ 30 millions de litres de sauce de poisson par an, dont la meilleure qualité est vieillie pendant 12 à 15 mois dans ces immenses cuves.
Points forts: Chaque tonneau en bois est fabriqué à la main à partir de bois de boi loi, une essence d'arbre qui ne pousse que sur Phu Quoc et qui confère un arôme spécifique à la sauce pendant son vieillissement. Les ouvriers foulent encore le mélange de poisson et de sel pieds nus dans les tonneaux, une méthode traditionnelle que l'on croit capable de produire la fermentation la plus régulière.

- Skip the gift shop at the end and ask to taste the 15-month aged sauce instead of the standard 6-month batch.
- Wear closed-toe shoes as the factory floor can be slippery from oil residue and fish drippings.
- Bring a small bottle or container to buy the premium grade sauce, they sell refills from the barrel at bulk prices.
- Photography is allowed but avoid using flash near the fermentation barrels as light can affect the aging process.
