The island produces around 30 million liters of fish sauce annually, with the highest grade stuff aged for 12 to 15 months in these massive vats.
Destaques: Each wooden barrel is handcrafted from native boi loi wood, a tree species that grows only on Phu Quoc and imparts a specific aroma to the sauce as it ages. Workers still stomp the fish and salt mixture barefoot inside the barrels, a traditional method believed to produce the most consistent fermentation.
