見どころ: 屋根付きのアーケードを進むと、磯の海藻と炭の香りが漂い、シェフたちが氷のように輝くウニをご飯に削りかけ、800円の串焼きの和牛にブロートーチを当てるのを見られます。店主は歌うような声で値段を交渉し、最も辛い一口を試すように挑みます。地元の80歳の田中さんのような店主は、明治時代から伝わる日本酒の布を使った方法で7日間マグロを熟成し、200円でなめらかな違いを味わえる切れ端を手渡してくれます。
